Over the last several vintages, Ed and I have been incorporating more variation into our winemaking to maximize the diversity of aromas and flavors we’re getting from our string of Napa Valley Chardonnay vineyards. We are using a mix of barrel and steel fermentation (a longer, cooler fermentation) to highlight the different characteristics we get from these vineyards.
